Sedimentation measurements determine the quality of gluten which is as important parameter as amount of gluten in bakery products. Moreover, by testing delayed measurements with sediment existence of sunn pest in wheat flour is determined. Sunn pests are known with their proteolytic enzyme activities which breaks the gluten available in the wheat flour and this causes a low quality of bread.
