EKINOGRAPH A6

Ekinograph A6 is used to measure amount of alpha amylase enzyme in wheat flour. A mix of water and flour is placed in device and it heats by an increasing rate of 1.5oC per minute. Data taken from this device are temperature of gelatinization at beginning, maximum rate of gelatinization (peak point) and temperature of optimum gelatinization. Using these data quality of flour is controlled by flour factories and in this way it is easy to decide which kind of improver can be used to obtain desired bread from each type of flour.
